Coconut-Lime Mojito

This drink is so delicious and refreshing. But be careful- it's very easy to put down 3 or 4 very quickly because they are so tasty! This makes 2 drinks.

-3 limes (sliced into 4 wedges each)
-10-15 mint leaves, torn in half
-4 oz. Bacardi Limon
-4 oz. Malibu Coconut Rum
-2 tbsp. Coco Lopez cream of coconut
-Club soda, chilled

Squeeze each of the lime wedges in the glasses (6 wedges for each glass). Add the mint leaves and the 2 rums. Muddle these ingredients together.  Stir in the cream of coconut.  Fill glass with crushed ice.  Add Club soda to taste. 


What to Wear: Wells Fargo Golf Tournament

Every May the golfers of the world descend on Charlotte, NC for the Wells Fargo Golf tournament (formally Wachovia which I still call it).  My husband and I are lucky enough to have a family friend who lives on the Quail Hollow Country Club golf course where the tournament takes place.  We pretty much "set up shop" on the 13th hole. We take chairs, drinks and snacks to enjoy.  It's a great place to mingle and you usually get to see your fav golfer up close and personal! :-)

The weather for this year's tournament HAS to be better than last years! Last year I planned on wearing cute Trina Turk shorts and a bright tank but ended up in jeans, a long sleeved top and jacket. I put together some of my favorite options for this year's tournament.  They are all cute, comfortable outfits to wear to enjoy a day of golfing, cocktailing and socializing.

Spinach & Tomato Fusilli

This is great for a Girls' Night In or Meatless Monday!


-3/4 lb. whole wheat fusilli pasta
-1/4 cup extra virgin olive oil
-2 cloves of garlic- minced
-1 pint grape or cherry tomatoes- sliced in half
-1 bag of baby spinach
-1 lemon
-1/2-3/4 cup of grated parmesan cheese

Cook pasta al dente according to package directions.  Reserve a 1/4 cup of startchy pasta water before you drain the pasta. In a large skillet or pot heat olive oil on medium heat.  Add minced garlic. Heat for 1-2 minutes. Add halved tomatoes.  Cook for two minutes.  Add spinach.  Stir constantly. Cook until spinach is completely wilted.  Add the juice of one lemon and reserved pasta water. Remove from heat. Add cooked pasta and stir until combined. Add grated parmesan.  Serve with extra parm and lemon if you like.

The weather in Charlotte has been amazing the past few days and I am hoping it sticks around! We had some friends over for drinks and dinner on our patio. This outfit was perfect- so comfy and cute. It would also be perfect for an outdoor festival or concert.

Turkey Reubens

This makes 4 delicious sandwiches.

-8 slices Seedless Rye Bread
-1 lb Sliced Deli Turkey
-8 slices Ultra Thin Sliced Swiss cheese (2 slices per sandwich)
-8 tbsp Thousand Island Dressing (2 tbsp per sandwich)

Build each sandwich by putting the cheese, turkey, sauerkraut and Thousand Island on one slice of bread.  Top with other slice of bread.  Put all four complete sandwiched on heated panini press and close lid.  Grill for 3-5 minutes until bread is lightly toasted and cheese has melted. At our house we eat this sandwich with chips and mixed fruit. Yum!

Champagne Margaritas

For the drink:
8 oz. white tequila
8 oz. triple sec
2/3 cup Rose's Sweetened Lime Juice
Juice of 4 limes
1/4-1/2 cup of simple syrup (I like this a little more tart; other members of my family like it sweeter)
1 bottle of Prosecco

Mix all of the these ingredients, except the prosecco, in a pitcher and chill in the refrigerator for 1-2 hours (or even over night).

For the sugar rim:

Zest 2 of the limes and 1/3 cup of sugar to a bowl. Stir until evenly mixed in. Rim your champagne glass with lime juice then dip in the zest/sugar mixture.

Pour tequila mixture in prepared champagne glasses 1/3 full. Top with prosecco, cava or your favorite champagne. Enjoy!
