Swimsuits & Cover-ups

Pool and beach season has arrived!!! I love the weather and spending time outside with the kids, but I don't always love putting on a bathing suit.  Every year I go on the hunt for the perfect suits and cover-ups.  My husband loves me in a bikini {bless his heart!} but I LOVE my one-piece suits!

I have recently discovered Mara Hoffman and I am in love with everything she does… even bikinis! I ordered a couple from Piperlime.

Hands down one of my favorite one-piece bathing suit brands is Bleu Rod Beattie.  I discovered them last year and love them! They are very flattering on "mom-bodies."  I have 2 of them similar to this. This one is from Nordstrom.

It's hard to go wrong with a black one-piece bathing suit!

Trina Turk also can do no wrong in my eyes when it comes to a fabulous one-piece with a fun print. I have one similar to this from her collection last year. This one can also be purchased at Nordstrom.

Now let's talk cover-ups! Usually pants would be too hot or constricting for the hot summer months in the South.  But not these!

These pants look great over any bathing suit. I received a ton of compliments the first day I wore them! I got them at Everything but Water.

Jen's Pirate Booty has some of the cutest dresses and tunics that work great as cover-ups! They are very boho and very comfortable.  Best of all you have two uses for them!

Corn Avocado & Tomato Salad

This is the perfect side dish to pork chops or grilled chicken during the spring and summer months while corn and tomatoes are in season!


6 slices of thick-cut bacon
3 green onions, sliced
8 ears of corn, cut off the cob
5 oz of crumbled feta cheese
1 pint of grape or cherry tomatoes, cut in half
3 tbsp of cilantro, chopped
1 large avocado, cubed
juice of 2 limes
salt and pepper to taste

Heat a large skillet over medium-high heat. Add bacon and cook until crisp. When bacon is done, remove from pan and place on paper towel-lined plate.  Drain most of the bacon grease out of pan, leaving 2-3 tablespoons.  Add corn to bacon grease and cook until kernels are light golden brown, about 7-8 minutes. Add green onions and cook for 3 more minutes.  Remove from heat and add feta, tomatoes, cilantro and avocado.  Add lime juice, salt and pepper. Stir salad to combine all of the delicious flavors! Can be served hot or at room temperature.  Enjoy and try not to eat it all in one sitting!!!

Peach Lime & Raspberry Sangria

This is the perfect spring cocktail for a Girls' Night.  I got this recipe from Giada De Laurentiis


-1/4 cup simple syrup
-1 lb bag of frozen peaches, thawed
-1/2 cup peach schnapps
-1 tbsp fresh lime juice
-1/2 cup raspberries
-1 lime, thinly sliced
-1/4 cup club soda, chilled
-1 bottle of Prosecco, chilled

Puree 2 cups of the peaches and simple syrup in a blender. Pour into a pitcher. Add peach schnapps and lime juice and stir well. Add lime slices, raspberries and remaining peaches and refrigerate for 2-6 hours.  Add club soda and prosecco to pitcher and stir.  Serve immediately.

Mother's Day Recap

I hope everyone had a wonderful weekend and Mother's Day!  My Mother's Day was wonderful. I am so, so thankful for all that I have.  Each day with my husband and three children is a gift- the best gift I could ask for. I have been made aware in the past couple of months that life is precious and short.  A wise person said "All that matters is faith, family and friends. Not your job or the house you live in."  This is so true.  I have been reflecting on these words since he said them on Monday at his daughter's funeral. Please cherish your loved ones and make the most of each day you have!


Getting everyone looking at the camera (and smiling- somewhat) was a miracle!!

I got to snuggle in the bed with the boys while they gave me my handmade Mother's Day gifts. I love receiving those kinds of gifts and I will always cherish them.  Hollins is a late sleeper, but she gave me her precious gift when she woke up.

We went to brunch with my dad and mother-in-law at Carmel Country Club.  It was delicious as always! We dined on oysters, crab claws, shrimp, omelets and of course their famous dessert table.  Probably not the best idea since I had to put on a swimsuit for the first time since August!  But it was worth every calorie!

After brunch I headed home to change for a Mommy Mixer poolside.  This is such a treat for us moms to have a little "alone" time on Mother's Day.  Its nice to sip cocktails by the pool without having to watch children! How often does that happen?!?  My sis and a few friends joined me.

I got to end the day tucking my sweeties into bed.  I was exhausted from the heat and cocktails by the pool so Allen treated me to sushi in bed!  Sounds crazy, right?!? It was PERFECT!

Jackson's Meat Sauce

My oldest, Jackson, LOVES this sauce!

-1 tbsp olive oil
-2 lbs lean (93%) ground beef
-3 cans no salt added tomato sauce
-1 small can of tomato paste
-1 jar of Classico tomato basil sauce
-1 pack of sliced mushrooms
-2 gloves minced garlic
-Worcestershire sauce
-oregano (to taste)
-basil (to taste)
-kosher salt (to taste)


-Heat the olive oil and brown the ground beef
-When it is no longer pink add the mushrooms, sautee until soft
-Add the garlic, sautee about a minute 
-Add the remaining ingredients
-Stir to combine and simmer 30-45minutes, stirring occasionally

For the kids I put it on whole wheat fusilli, but for me and my husband I put the sauce on spaghetti squash and top with grated parmesan.

The weather has been pretty perfect around here.  Warm during the day but cool in the mornings and evenings. With a simple outfit like this, a pop of color from a necklace looks terrific.

Lilly Pulitzer Birthday Bash

For Hollins' first birthday I decided to do a classic Lilly Pulitzer theme.  Nothing can beat pink, green and gold for a one year old girly girl!

I always get my flowers from the South Charlotte Trader Joe's.  Terry is wonderful and you can tell her a couple of weeks before a party what kind or color you need to go with your theme and she'll save them for you when they come in!  Plus- they are a great deal!

The adults were drinking Bloody Mary's, Passion Fruit Mimosas and Pink Champagne.
The kids enjoyed Pink Lemonade and Strawberry Milk.

The party was in the morning so the food was traditional Southern brunch food- Muffins, Shrimp & Grits, Ham Biscuits, Deviled Eggs and Fruit & Yogurt Parfaits. Yum!
