Fashion Fridays

Life has been extra busy lately but Allen and I managed to sneak out for date night with some of our best friends.  We went to one of our favorite spots: Foxcroft Wine Company {formally The Wine Shop}.  They have the best truffle fries and doughnuts!
Top: Anthropologie {on sale now!}
Jeans: Mother Cruiser Flare from Anthropologie
Heels: Steve Madden from Piperlime

If I could live in this outfit- I seriously would.  It's so, so comfortable but bright & cheerful also. I LOVE IT!!! It was perfect for a Girls' Night In with sushi {from Sushi Guru, of course}, wine and good girlfriends.
Sweatshirt: Wildfox from Nordstrom
Cheers, friends!
Have a great weekend!

Valentine's Day Sweet Treats

Allen and I don't do much to celebrate Valentine's Day.  Everything is twice as expensive, overcrowded and getting a sitter is almost impossible.  We celebrate at home with good food, wine and of course some sort of sweet treat.  Here are a few of our favorite treats to celebrate V-day at home.

Homemade Peanut Butter Cups
1/4 cup butter
3/4 peanut butter
3/4 graham cracker crumbs
1/4 cup sugar
1 cup semisweet or dark chocolate chips
1/4 cup milk (I use 2%)
Sea Salt
Melt butter and peanut butter together in microwave safe bowl for 45 seconds.  Stir until combined.  Add graham cracker crumbs and sugar and stir well. Evenly distribute mixture among 12 muffin cups that have muffin papers in them.  Refrigerate for 15-20 minutes.  In another microwave safe bowl melt chocolate chips and milk in 25-30 second intervals, stirring in between until chocolate is melted.  Stir completely to combine.  Evenly distribute among muffin tins with peanut butter mixture.  Sprinkle with sea salt and refrigerate 45 minutes- 1 hour.  Store in refrigerator.

Chocolate Covered Raspberry Martini
2 oz Vanilla Vodka
2 oz Chambord
2 oz Godiva Dark Chocolate Liquor
2 oz Cream
2 oz Milk
1/2 tsp chocolate syrup
Shake all ingredients with ice and pour into martini glass.

Chocolate Dipped Strawberries
Wipe strawberries cleans with damp cloth and allow them to dry completely.  Dip in melted chocolate of choice.  Drizzle with white chocolate and decorate with sprinkles.
Happy Valentine's Day!!!
XOXO,
Josephine

Pasta with Asparagus & Pancetta {Springtime Pasta}

Loaded with fresh veggies!
One pot perfection!
I got this delicious pasta recipe from my sister, Madeline and her husband, Dave.  I made a few changes to simplify it.  Since the weather here was so beautiful yesterday I decided to break out one of my favorite Spring time recipes.  I love it because it is super flavorful but not at all heavy.
1 lb whole wheat spaghetti
8 oz pancetta, diced
2 tbsp butter
2 garlic clove, minced
1 lb baby portobello mushrooms, sliced
1/4 of purple onion, thinly sliced
11/2 lb asparagus, ends removed and cut into 11/2 inch pieces
1/2 cup fresh grated parmesan
Salt and pepper, to taste
Cook pasta in a large pot, according to package directions. Drain pasta and return to pot. In a large skillet or dutch oven, cook pancetta until crisp. Remove pancetta with slotted spoon and place on a plate lined with a paper towel.  Leave about one tablespoon  of pancetta grease in pan and drain off the rest.  Add one tbsp of butter. When butter has melted, add garlic, onion and mushrooms, cooking until slightly softened.  Add asparagus and cook until al dente.  Add the pasta and the remaining 1 tbsp of butter, parmesan, salt and pepper.  Toss until butter and parmesan are melted and combined.  Add pancetta to pasta and toss again until everything is evenly distributed.  Serve in large bowls with extra parmesan cheese.
XOXO,
Josephine
