Southwestern Grilled Chicken Salad with Avocado Ranch

I basically put this salad together to have an avenue for the yummy dressing listed below!
Salad
1 bag chopped Romaine lettuce
1 can of black beans, drained and rinsed
2 ears of corn, grilled and cut off the cob
1 cup grape tomatoes, diced
2 green onions, diced
2 grilled chicken breast (I marinated them in lime juice, olive oil, cumin and salt), sliced
Pepperjack Cheese, shredded
Tortilla Strips
Place ingredients in a salad bowl.  Top with Avocado Ranch dressing.

I found this Avocado Ranch recipe on Pinterest and immediately had to try it.  I changed a couple of things from the ingredients in the original recipe.  It was fabulous on this salad!
1/2 cup Mayonaise
1/2 cup Sour Cream
2 garlic cloves, minced
1 avocado, diced
1 tomatillo, chopped & husk removed
1 jalapeño, chopped, seeds removed
2 tbsp lime juice
1 tsp white wine vinegar
2 tsp worcestershire
1/3 cup cilantro, chopped
1 tbsp dill, chopped
2 tbsp chives, chopped
1/2 tsp paprika
Salt & Pepper, to taste
2 tbsp milk, if needed to thin it out
Put all ingredients in food processor until combine completely.  Chill at least 2 hours.

Fashion Fridays & Restaurant Rec

 Spring nights call for Sweaters, leather and pops of color!
We tried Stagioni in Charlotte for the first time for my friend McCay's Birthday.  The atmosphere was fun- very much like being in a quaint restaurant somewhere in Italy.  I started out with a delicious tequila cocktail called the Bella Rosa.  Everyone enjoyed their food immensely.  We all shared the charcuterie & cheese tray.  The truffle cheese melted in my mouth as did the Prosciutto di Parma.  For my meal, I got the Brussel Sprout & Prosciutto Pizza- truly amazing.

WIW Wednesdays: A Week of Spring Outfits & Easter

I hope that everyone had a wonderful Easter and fun-filled Spring Break.  Time with family is very precious to me so I soaked up every minute. We stayed pretty busy the whole week the kids were out of school and even squeezed in dentist appointments for all 3!
I am completely in love with this dress from Anthropologie.  The uneven hem makes it look fun and not like your traditional shirtdress.  I have already worn in 3 times in the past two weeks and received loads of compliments.  It's super comfy too!

It was super hot on Good Friday so I got to break out the shorts!  I got this cream sleeveless top at Scout & Molly's & cute black shorts at Chezelle in Charlotte.  The shorts are slightly tie dyed and have fun detail on the sides.  The fringe sandals (my favorite ever!) are Koolaburra.  In Charlotte they can be found at Scout & Molly's or Doll.

I don't usually wear a lot of Lilly Pulitzer but I fell in love with this one for Easter day. I love the detail in the lace.  I am such a sucker for anything with lace!

Fashion Fridays: Currently Loving….Sets!

Matching Sets are everywhere this season.  The monochromatic look is really popular and I love it!  So far I have bought 2.  This black one at Scout & Molly's in Charlotte and the other cream one from Anthropologie.

In addition to my usual black and white sets, I am planning on finding a fun printed set.  I have had my eye on these two at Piperlime. The Karina Grimaldi would be perfect for attending a golf tournament or bridal shower this Spring.  The Townsen set would be perfect for a trip to the Caribbean or a Cinqo de Mayo party.

Sriracha Beef Lettuce Wraps

This recipe is so super easy it doesn't even need to be called a recipe. These lettuce wraps are so light and refreshing- perfect for a Spring evening!  This recipe serves 2 with no leftovers!
Filling
1 tbsp grapeseed oil
1 pound ground beef (I use 90/10)
3/4 cup celery, diced
1 clove of garlic, minced
3/4 green onions, chopped
3/4 water chestnuts, diced
1/4 cilantro, finely chopped
1/2 tsp ground ginger
juice of half a lime
Sauce
4 tbsp Sriracha
5 tbsp rice vinegar
3 low-sodium soy sauce
2 tbsp honey
Lettuce Cups (I used iceberg)
In small bowl, combine all ingredients for sauce and mix with a small whisk.  Set aside.  Heat oil over medium heat.  Add ground beef, cooking and crumbling until no longer pink.  Add celery and garlic.  Cook for 5-7 minutes.  Add green onions, water chestnuts, cilantro and ginger.  Cook for 2-3 more minutes.  Add half the sauce and lime juice.  Cook for 5 minutes stirring well.  Add remaining sauce and cook for 5 more minutes.  Serve in lettuce cups and squeeze a bit more lime juice over beef mixture.
