We all know I have a thing for soups, especially during the colder months. This is soooo good because of the kick from the hot Italian sausage. The tortellini makes it extra filling also. Once again- family favorite meal right here!! 5 out of 5 eat it. That’s a win for this mama!
2 tbsp olive oil
1 lb of Hot Italian Sausage, casings removed & broken into small pieces
1 container Mirapoux
8 cups of chicken broth
4 cups kale, chopped or shredded
1 lb fresh cheese tortellini, already cooked to al dente
Salt & Pepper to taste
Parmesan (optional)

Heat olive oil over medium heat. Add sausage and cook until no longer pink. Remove with slotted spoon. Add mirapoux. Sautéed until all veggies are soft and onions are translucent. Add chicken broth. Simmer for 15 minutes. Add tortellini and kale. When kale has wilted, add sausage back in. Season with salt and pepper. Serve in bowls topped with grated parm.
