In need of a new cocktail for New Year’s? This one would easily work for a Christmas gathering (for next year, obviously) or a New Year’s party.
Pomegranate Gin Fizz Recipe:
2 oz Gin (Doc Porter’s is my favorite)
3 oz Pomegranate Juice
Splash of Rosemary Simple Syrup (recipe below)
Juice from 1- 1 1/2 Limes
Club Soda
Pomegranate seeds & fresh rosemary sprigs for garnish
Put crushed ice, gin, pomegranate juice, lime juice and simple syrup in a glass and stir well. Add club soda. I didn’t put an exact amount of club soda because in my experience different people like different amounts in their cocktails.
Rosemary Simple Syrup
In a small saucepan, combine 1/2 cup of water, 1/2 cup of sugar and 3 stems of fresh rosemary. Whisk over medium heat until sugar dissolves completely. Simmer an additional 1-2 minutes. Remove from heat and strain out rosemary leaves and stems. Chill syrup in refrigerator.
I served this cocktail at a girls gathering I had at my house last week. People who didn’t normally like gin even liked this. Also, I have gotten lots of questions about this skirt that I wore to church on Christmas Eve. I have worn it twice (with different tops) in the past week already. I love it because of the beautiful cranberry color and it has just a few sparkling beads but isn’t over the top. Oh and, it has a stretchy waistband- perfect for all of the holiday indulging!
